Let me introduce you to a little something I like to call "Chicken Chili". It is a DELICIOUS, healthy, easy to prepare, 30-minute wonder of a dinner dish. What?? What was that? You want the recipe???
Okay- here you go! :o)
Chicken Chili
1 large, FROZEN, boneless, skinless chicken breast (frozen is not essential- it's just convenient)
1 28oz can of diced tomatoes + 1 can-full of water
2 14 oz cans black beans (or any beans you like) drained and rinsed
1/2-1 whole 8 oz can of diced green chili
1 medium onion, diced
1 cup of corn (canned, frozen or right off the cob)
1 palm-full of cumin (or about 2 tablespoons if you NEED to measure)
1 teaspoon of chicken bullion (or 1 cube)
salt to taste
Okay- it's seriously this easy...... Place ALL of these ingredients in a pot, bring it to a boil, reduce the heat to a simmer and cook, uncovered for 20 minutes. While you wait, prepare your toppings.
Remove the chicken breast (it should be cooked now), shred it on a plate and add it back to the pot. At this point it is ready- but you can let it simmer longer if you like. Place it out on the table with a number of toppings to choose from. Top it how you like it and enjoy!
Topping suggestions:
Lime wedges (a MUST- it really brightens the flavor of the dish)
Chopped tomato
Chopped bell pepper
Chopped green onion
Chopped avacado
Cilantro leaves
Sliced black olives
Shredded cheddar
Sour cream
**We will often serve this chili with a simple cheese crisp or quesadilla. AMAZING!
