So what do you think?? Would you eat it? Red, White and Blue pasta?? It tastes no different than regular pasta- it just has food coloring added. I'll admit, it did throw my kids off. My attempt to make "Patriotic Pasta" kinda creeped them out a bit. Cole said it looked like veins and arteries. gross. Once they tasted it though, they loved it!
Place your pasta in boiling water that has a tablespoon or so of olive oil in it. Boil it for 4 minutes LESS than the time recommended on the box for aldente pasta. Then strain it and place it in a large bowl or Ziplock bag that contains just enough cool water and food coloring of your choice. Leave it in the bag until it reaches the desired depth of color and then rinse it before serving.
I like to take this pasta and make a simple lunch for my kids by melting 2 tablespoons of butter in a sauce pan, adding the juice of 1 lemon, some salt and white pepper to taste and then finish it off with a few tablespoons of Pecarino Romano cheese. It's light, fresh, and delicious and the kids love it!
